Vegan Gajar Ka Halwa (vegan carrot pudding)


Ingredients

2 Lb carrots (grated)
1 cup soya milk
1 cup sugar

Garnish
1/4 cup cashews
2 tablespoon dates

Preparation

Cook carrot with half of sugar on medium heat for 15 minutes. Stir well while cooking.
Add the soya milk, rest of sugar and cook again in medium-low for 15 to 20 minutes.
Garnish with the cashews and dates and serve.
