Mamidikaya annam (Mango Rice)


Ingredients:

Cooked rice - 1 cup
Grated Raw Mango - 1/2 cup
Green Chilies - 5
Peanuts - 1 tbsp
Cashew nuts - 7
Chana Dhal - 1 tbsp
Urad Dhal - 1 tsp
Mustard seeds - 1 tsp
Turmeric powder - a pinch
Curry leaves - a bunch
Asafetida - a pinch
Salt
Oil

Method:

Heat oil in a pan, add mustard seeds, curry leaves, green chillies, turmeric powder, chana dhal, urad dhal, peanuts, cashew nuts and fry for 5 mins, until the dhal and nuts turn golden brown.
Now add the grated raw mango and cook for 5 mins.
Add salt and asafetida and combine well.
Now add this mixture to the cooked rice and mix well.
Mango rice is ready to eat now.
