Aloo paratha


Ingredients:

To prepare the masala:

Potato – 2 big size (boiled and smashed)
Onion – 1 big size finely chopped.
Ginger, garlic paste – 1 tsp
Turmeric powder – a pinch
Chilli powder – 2 tsp
Salt
Garam masala ( optional) – 1 tsp
Mustard seeds- 1 tsp
Curry leaves – 10 to 12
Coriander leaves for garnishing

To prepare the paratha:

Wheat flour – 2 cup
Salt
Water
Oil or ghee


Method 1 :

Combine the wheat flour, salt, oil and sprinkle water in a bowl and make thick dough.
And keep it aside for ½ to 1 hour.
Heat oil in a pan and add the mustard seeds in it when it gets popped add the curry leaves and onion in it. Fry till the onion turns golden brown
Add the ginger - garlic paste and sort it for 2 min, now add turmeric powder, chilli powder, garam masala and salt.
Mix it well and finally add the smashed potato to it. And cook for 10 min until the masala gets combined with the smashed potatoes.
And garnish it with coriander leaves.
Remove it from heat.
Make small size balls (lemon size) and keep it aside.
Now make big size balls from the thick dough and flatten it to 4 to 5 inches round, place the potato masala balls in the centre of the flatten dough and make it into a ball.
Again flatten the stuffed dough to 7 to 8 inches round.
Heat a tava , place the rolled stuffed paratha and pour some oil on both the sides.
Remove the parathas from heat once both the sides becomes golden brown.
Serve hot and enjoy.



Method 2:

Prepare the aloo masala as mentioned in the method 1.
In a bowl mix wheat flour, salt, oil and sprinkle water to make a thick dough. keep it aside for ½ hour
Make small balls from the thick dough. Flatten the balls in to a thin chappathi
Now take 2 thin chappathi dough and spread the masala in one chappathi and cover it with the other one.
Apply oil on the corner so that the masala stuff doesn’t comes out.
Heat a tava , place the rolled stuffed paratha and pour some oil on both the sides.
Remove the parathas from heat once both the sides becomes golden brown.
