Olan
Ingredients:
Pumpkin - 100 gms
Ash Gourd - 100 gms
Red Gram dhal - 1 tbsp
Coconut - 1no
Green Chilies - 3
Coconut oil - 2 tsp
Curry leaves
Salt
Method:
Soak the red gram dhal in water for 5 hr.
Cut ash gourd and pumpkin in to small pieces.
Cook the vegetable pieces and soaked red gram dhal in water, until the dhal and vegetables are completely cooked.
Take 1/2 cup thick milk and 1 cup milk(with water) from coconut and keep it aside.
Add green chilies and salt to the vegetables and allow it to cook for another 5 mins.
Now add the 1 cup coconut milk and allow it to boil till the gravy becomes thick.
Add the 1/2 cup thick coconut milk and cook for another 5 to 7 mins.
Before removing from fire add coconut oil and curry leaves.
Combine well and serve hot.
